I won't do your project for you, but I can point you in the right direction. http://www.hasbro.com/nerf/en_US/shop/browse.cfm contains all the Nerf guns Hasbro is currently selling. http://nerfguns.org/ catalogs all Nerf guns ever sold. Eliminate the guns on the first site from the guns on the second, and you've just compiled a list of all discontinued Nerf guns.
As for why guns get discontinued, well, it's fairly simple. No company can afford to keep the equipment/tooling in place for every product they've ever made. When they create a new product or a new line, they phase out old products and lines of products to avoid having to keep the materials and hardware around to produce both. Eventually manufacturing technology may become versatile enough that it will no longer be necessary to end the 'life' of a product, but companies may decide to do so just to pressure consumers into buying items through the knowledge that the product will only be available for a limited time.
If you were specifically wondering about products discontinued because of safety issues, that's a different matter. It appears that now, instead of simply discontinuing a product, Hasbro prefers to recall a generation of a product and release a fixed version. http://news.consumerreports.org/safety/2008/10/nerf-gun-recall.html The Nerf Recon is still on shelves today.
